The Path to Excellence

Whether at the storied «Castello del Sole» in Ascona or the famed «Suvretta House» in St. Moritz, Ott consistently impressed his mentors, including renowned chefs Fabrizio Zanetti and Mattias Roock, who trusted him to maintain the highest standards—even granting them the rare luxury of a day off. Such confidence speaks to Ott’s measured poise: when ‘der Leo’ held the reins, the kitchen ran smoothly and creatively, producing exquisite dishes that left no diner unmoved.

Chef Leopold Ott and Maître Raffaele Rispoli’s Dynamic Partnership

Now, with an innovative two-season approach—spending summers as the second chef at Castello del Sole and winters as the leading figure at the Cà d’Oro—Ott has found his culinary home in the Engadin once more. He brings with him not only a well-honed skill set developed in Switzerland’s top kitchens but also a handpicked team from Castello del Sole.

At the Cà d’Oro, he collaborates seamlessly with Maître Raffaele Rispoli and his Amalfi Coast-inspired front-of-house team, forging a dynamic partnership that ensures guests enjoy a dining experience as warm and inviting as it is exquisitely refined.
