This spring, ALATi celebrates the exceptional elegance of white asparagus with a specially curated à la carte menu by Chef Phillip Taylor. Known as the ‘king of vegetables’, white asparagus is valued for its tender texture and subtle, nutty flavour, making it a highly coveted ingredient in fine dining. Its versatility lends itself to an array of sophisticated dishes, each highlighting the delicate taste of this seasonal treasure.
Signature creations include the White Asparagus Risotto, elevated with succulent Hokkaido scallops, aromatic black truffle and a touch of Grana Padano. Seafood enthusiasts will delight in the White Asparagus with Miso-Glazed Cod Fish, a harmonious pairing of delicate cod, dashi butter and Avruga caviar. For a heartier indulgence, the Roasted Baby Chicken is perfectly complemented by black truffle butter, white asparagus purée and potato dauphinoise.
